Jerusalem Bagel

How do you make homemade Jerusalem Bagel?
Knead flour, yeast, milk, water, sugar, and salt; let rise for one hour at room temperature and another hour in the refrigerator. Divide the dough, shape it into long strips, and close them into ovals. Brush with water and baking soda, cover with sesame seeds, and let rest for 2 hours. Bake at 220°C for 10 minutes, then at 200°C until golden.
Of Israeli origin, popular and sold in bakeries throughout the country. This type of bread is shaped like an elongated, semi-sweet doughnut. Delicious served with our cold cuts, cheeses, spreads, hummus, or simply enjoyed on its own.
The screen will not turn off while you cook.
Servings: Makes two bagels of approximately 400 g each
Ingredients
- 500 g type 0 flour
- 7 g fresh brewer's yeast
- 100 ml room-temperature water
- 160 ml milk (plant-based or dairy)
- 25 g sugar
- 10 g salt
- Sesame seeds
- 2 tablespoons baking soda

Instructions
Sift the flour into a large bowl.

Add the yeast, almost all the water, and the milk.

Mix well with a large spoon or with a stand mixer.

Add the sugar and mix.

Add the salt and the remaining water. Knead thoroughly until you obtain a smooth, homogeneous dough.

Shape it into a ball.

Transfer it to a bowl, cover it, and let it rest for 1 hour inside the turned-off oven.

After that time, place the bowl in the refrigerator and let it rest for 1 more hour.

Remove it from the refrigerator and place the dough on a work surface. Divide the dough in two. With the palms of your hands, roll each piece out until you form a smooth strip about 80 cm to 1 m long.

Form two ovals and place each one on a baking tray lined with parchment paper.

Dissolve two tablespoons of baking soda in a cup of water.

Brush the surface of each oval.

Sprinkle sesame seeds over each one. Cover and let rest in the turned-off oven for 2 hours.

Remove from the oven after the resting time. Preheat the oven to 220°C (430°F).

Bake for 10 minutes, lower the temperature to 200°C (390°F), and bake for another 10 minutes. Let cool and enjoy with your favorite accompaniment.
