Vegetarian Carrot Burgers

How do you make vegetarian carrot burgers?
Finely grate the carrots and mix them in a bowl with Parmesan cheese, yogurt, rice flour, lemon zest, and aromatic herbs. Knead until the ingredients are well combined and shape the burgers with your hands. Cook them in a pan with olive oil for 3–4 minutes on each side until golden.
This is a practical, tasty, and versatile dish, ideal to include in our everyday diet. Easy to make, quick, and nutritious.
The screen will not turn off while you cook.
Servings: Makes approx. 14 burgers
Ingredients
- 500 g carrots
- 100 g Parmesan cheese
- 60 g unsweetened soy or dairy yogurt
- 60 g rice flour (3 tablespoons)
- Zest of 1 organic lemon
- 2 g dried sage or 5 fresh leaves
- 1 g dried thyme or 2 fresh sprigs
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
Start by finely grating the carrots and placing them in a large bowl. Set aside.

Grate the lemon peel and chop it finely. Add it to the bowl with the carrots.

Add all the remaining ingredients.

Mix with a spoon or with your hand until all the ingredients are well combined.

Shape all the burgers and place them on a plate or work surface.

Pour a couple of tablespoons of extra virgin olive oil into a nonstick pan and add the burgers. Cook for 3–4 minutes.

Flip the burgers and cook for another 3–4 minutes, or until golden.

Continue until they are all cooked. Serve hot with a fresh salad.
