Vegan Banana Pancakes

How do you make vegan banana pancakes?
Mash the bananas into a purée and mix them with plant-based milk, yogurt, and oil. Add spelt flour, ground oats, baking powder, and chocolate chips. Let the batter rest for 5 minutes. Pour portions into a hot greased skillet, cook for 2-3 minutes per side until golden, and serve.
In these exquisite vegan pancakes, we use oat flour among just a few ingredients, making them a lighter and healthier alternative for a delicious breakfast.
The screen will not turn off while you cook.
Servings: Serves 4 people (8-10 pancakes)
Ingredients
- 3 very ripe bananas
- 100 ml plain unsweetened soy yogurt
- 1 teaspoon ground cinnamon (2 g)
- 100 g whole spelt flour
- 100 g rolled oats (or oat flour)
- 10 g baking powder
- 200 ml oat, rice, or almond drink with no added sugar
- 50 g dark chocolate chips
- 50 ml melted coconut oil

Instructions
Start by processing the rolled oats with a mini blender or food processor to turn them into flour. If you already have oat flour, skip this step. Set aside.

In a separate bowl, mash the bananas with a fork until you get a purée.

Pour in the plant-based drink, yogurt, and coconut oil, and mix very well. Add the sifted spelt flour and baking powder, and finally the oat flour.

Mix all the ingredients well with a hand whisk or balloon whisk. If desired, also add the chocolate chips and mix until you get a smooth batter. Let rest for 5 minutes.

Place a little coconut oil in a nonstick skillet, pour in two tablespoons of batter per pancake, and cook for 2-3 minutes, until you see small bubbles on the surface.

Flip and cook for another 2-3 minutes.

Repeat until all the batter is used. Enjoy with your favorite drink.
