Servings: Makes 16 bread rolls
Ingredients
- 500 g type 0 or 1 wheat flour
- 250 ml warm water
- 10 g fresh brewer's yeast
- 10 g salt
- 50 ml extra virgin olive oil
Filling
- plant-based deli meat
- smoked cheese

Instructions
Sift the flour into a large bowl.

Add the yeast in small pieces and pour in almost all the water. Begin mixing, first with the help of a spoon and then with your hand, until the flour has absorbed all the water.

Next, pour in the oil and knead.

Finally, add the salt and mix until fully incorporated.

Knead for approximately 10 minutes, until you have a smooth, even, and elastic dough.

Place the dough in a greased bowl. Cover and let it rest until doubled in volume, approximately 1 hour.

Once it has doubled, remove it from the bowl and place it on a surface.

Deflate it.

Take small portions of approximately 50 g.

Flatten each little ball and turn it into a thin disc. Add the filling you like best. In this case, I used plant-based deli meat and a small piece of smoked cheese.

Close by pinching the edges, shaping it into a ball with the help of the palm of your hand.

Arrange the balls on a baking tray lined with parchment paper, cover, and let them rise for 30 minutes or 1 hour.

Until they have doubled in volume. Brush with a little warm milk and, if desired, sprinkle with sesame seeds. Preheat the oven to 200°C (395°F).

Bake for approximately 15-20 minutes, until they look golden.

Serve nice and warm or at room temperature, if desired. If there are any leftovers, place them in an airtight container for a maximum of a couple of days.
Enjoy your meal!
