Savory Star Bites

How do you make spinach-filled puff pastry stars?
To make these savory bites, first sauté the spinach and mix it with ricotta, salt, pepper, and nutmeg until you get a smooth cream. Spread the filling over one sheet of puff pastry, cover with the other sheet, and cut out star shapes. Brush with milk, decorate with sesame seeds, and bake at 180°C for 20-25 minutes until golden.
Savory star-shaped puff pastry bites are an elegant and versatile option that combines the crispy, flaky texture of puff pastry with flavorful fillings and a visually striking presentation. These little delights are perfect for appetizers, special celebrations, or as a sophisticated starter.
In this case, I make them during the Christmas season, which is why they are star-shaped, but we can change the shape to whatever we like best. As for the filling, we can also let our imagination run free.
The screen will not turn off while you cook.
Servings: For 20-30 bites
Ingredients
- 2 packages rectangular puff pastry sheets
- 400 g frozen spinach or 1 kg fresh spinach
- 250 g ricotta-style cheese
- Extra-virgin olive oil
- Pinch of salt
- Pinch of black pepper
- Pinch of nutmeg
- 2 tablespoons dairy or plant-based milk for brushing
- 2 tablespoons sesame seeds

Instructions
If using frozen spinach, place it directly in a nonstick pan with one tablespoon of oil. Let it thaw, then cook for another 5 minutes.

If using fresh spinach, wash it well, cut it into pieces, and place it in a nonstick pan as well, for about 8 minutes total. Sprinkle with salt and pepper. Once the spinach is ready, place it in a bowl and let it cool.

Once cool, add the ricotta, another pinch of salt, pepper, and nutmeg.

Using an immersion blender, create a smooth cream.

Stir well with a spatula until the cream is smooth and homogeneous; taste and adjust the salt if necessary.

Preheat the oven to 180°C (350°F). Spread the cream over the entire surface of the puff pastry sheet.

Place the other pastry sheet on top and press gently so they stick together well.

Using a star-shaped cookie cutter, cut out each of the bites.

Place a large plate in the center of a baking tray lined with parchment paper.

Arrange the star bites one by one around it, forming a circle. Brush them with a pastry brush dipped in milk or plant-based drink. Sprinkle with sesame seeds.

Bake for 20-25 minutes until golden. Place them in the center of the table and enjoy them warm or even cold; they are delicious.
