Penne Pasta with Tomato and Tofu Sauce

How do you prepare pasta with tomato and tofu sauce?
Sauté chopped onion, celery and carrot. Blend the tofu and add it to the soffritto along with the tomato sauce and curry, cooking over low heat for 20 minutes. Boil the pasta in salted water until al dente, drain it and immediately mix it with the hot sauce before serving.

Ingredients
- 320 g penne pasta
- 250 g plain tofu
- 500 g tomato sauce (canned or fresh)
- 1 onion
- 1 carrot
- 1 celery stalk
- Extra virgin olive oil

Instructions
Start with the sauce. Finely chop the onion, celery and carrot, either in a mixer or with a knife. In a high-sided pot, add 3 tablespoons of extra virgin olive oil and start sautéing the onion with the celery.

After 4-5 minutes, add the carrot.

Sauté for another 3 minutes. Meanwhile, cut the tofu into pieces and place it in the mixer.

Process it well; if you do not have a mixer or food processor, chop it finely with a knife.

Once it is very fine, add it to the pot with the sautéed aromatics and pour in the tomato sauce.

A couple of minutes before the pasta finishes cooking, add the curry. Adjust salt and pepper.

Stir the sauce well and let it cook for about 20 minutes.

Meanwhile, bring water to a boil in a large pot. Once boiling, add salt and the pasta; the cooking time will be written on the pasta package. Once cooked, drain it and mix it in a bowl with the tomato and tofu sauce. Note: If we have some tomato sauce left over, let it cool and place it in the refrigerator; it keeps well for 2-3 days.
