Creamy chickpea pâté with a smooth texture and pieces of black olives for Olive Hummus

How do you make black olive hummus?

Place precooked chickpeas, tahini, capers, lemon juice, olive oil, salt, and chopped black olives in a food processor. Blend all the ingredients until you get a smooth, creamy mixture. Serve immediately or refrigerate for a couple of hours in a covered container to intensify the flavors.

A delicate flavor for this version of hummus, exquisite to enjoy with raw vegetables, as an ingredient in a sandwich, or with our ancient grain square bread, where it is exceptional. Ideally, prepare it a couple of hours before enjoying it so the flavors become more concentrated. Naturally, we can double or triple it depending on our needs, especially for a delicate appetizer.

Servings: For about 350 g of hummus

Ingredients

  • 240 g precooked chickpeas (1 can)
  • 10 g capers
  • 45 g tahini sauce (approx. 4 teaspoons)
  • Juice of ½ lemon
  • ¼ teaspoon salt
  • 2 tablespoons extra virgin olive oil
  • 50 g black olives

Instructions

  1. Start by cutting the olives in half.

  2. Place all the ingredients in a mini food processor or grinder; if you do not have one, you can also use an immersion blender.

  3. Blend until you obtain a smooth mixture.

  4. Place the hummus in a container, cover, and refrigerate for a couple of hours. If you do not have that time available, no problem: enjoy it immediately, as it is equally delicious.
