Lentil Salad

How do you prepare a quick lentil salad?
Combine cooked lentils in a large bowl with washed fresh arugula and cherry tomatoes cut into quarters. Add vegan mayonnaise and mix gently until all the ingredients are combined. Let the salad rest for at least 30 minutes before serving so the flavors blend properly.
Fresh and delicious, this salad gives us a very interesting flavor that you will surely love. An interesting way to include legumes in our diet.

Servings: For 6-8 people
Ingredients
- 500 g cooked lentils
- 100 g arugula
- 12-15 cherry tomatoes
- 2 tablespoons vegan mayonnaise

Instructions
Start by gently washing the arugula, then dry or drain it well.

Wash, dry, and cut each tomato into quarters or halves.

Place all the ingredients in a large bowl.

Stir well and let rest for at least 30 minutes before serving, so all the flavors blend well.
