Herbed Soy Cream

How do you make herbed soy cream?
Cut firm tofu into cubes and process it with a little soy milk, salt, pepper, paprika, and turmeric. Blend the mixture, gradually adjusting the amount of liquid until you get a creamy, smooth, spreadable texture. Use it for fillings, spreading, or serving with your favorite appetizers.
A delicious, delicate soy cream that we can use in our favorite sandwich, with fresh bread, a fragrant schiacciata—in short, it is tasty with anything. In this case I make it with herbed tofu, but we can also use plain white tofu and add our favorite herbs.
