Blueberry Pancakes

How do you make vegan blueberry pancakes?
Mix whole wheat flour, baking powder, and baking soda. Separately, combine plant-based milk, oil, vinegar, and maple syrup. Combine both mixtures and add washed fresh blueberries. Pour portions into a hot greased skillet, cook for 2-3 minutes until bubbles appear, flip, and brown the other side. Serve with yogurt sauce.
A delicious variation on pancakes, one of the simplest and most delicious recipes to make at home. This version, with fruit inside the batter, is exquisite.
The screen will not turn off while you cook.
Servings: Makes 10 medium pancakes
Ingredients
- 160 g whole wheat flour
- 6 g instant baking powder for sweets
- 1 pinch baking soda
- 25 ml melted coconut oil
- 250 ml brown rice milk (or soy milk)
- 12 ml apple cider vinegar
- 30 ml maple syrup
- 100 g fresh blueberries
- 200 g unsweetened soy yogurt
- 2 tablespoons maple syrup
- 40 g fresh blueberries

Instructions
Sift the flour into a large bowl.

Add the baking powder for sweets and the baking soda, also sifted.

In another bowl, mix the milk with the oil, vinegar, and maple syrup.

Add the liquids to the dry ingredients.

Mix everything very well.

Wash and dry the blueberries.

Add them to the batter and mix gently.

Separately, in a small bowl, prepare the sauce: mix the yogurt with the maple syrup and set aside.

Place a little coconut oil in a nonstick skillet and begin making the pancakes, pouring a couple of tablespoons of batter for each one.

After about 2-3 minutes, you will see little holes on the surface of the pancakes.

This is the moment to flip them and cook them for another 2-3 minutes.

Repeat until all the batter is used. Serve very hot, pour a little sauce over the pancakes, and enjoy.
