Cauliflower and Potato Burgers

How do you make cauliflower and potato burgers?
Steam cauliflower and mash it together with cooked potatoes. Once the mixture is cold, add Parmesan cheese, spices and breadcrumbs until compact. Shape the burgers, chill them briefly and bread them with breadcrumbs and poppy seeds. Fry them in hot oil for 4 minutes per side until well browned.
A delicious variation for enjoying cauliflower, a vegetarian recipe you will love.
The screen will not turn off while you cook.

Ingredients
- Approx. 16-18 burgers
- 700 g cauliflower
- 200 g cooked potatoes
- 75 g Parmesan cheese
- 120-150 g breadcrumbs
- Extra virgin olive oil for the non-stick pan
- 10 g poppy seeds

Instructions
Divide the cauliflower, and for our recipe use only the florets; set the stems or tougher parts aside, as they could be used for a good little soup. Clean, peel and cut the potatoes into small cubes. Steam the florets for about 5-10 minutes until soft. Set aside to cool.

Place the cauliflower and potato in a mixer or food processor to create a smooth mixture. If you do not have a mixer, mash the ingredients with a potato masher.

Once the mixture has formed, transfer it to a bowl and let it cool completely.

Add the Parmesan cheese, pepper and ginger, and mix well. Taste and adjust the salt.

Gradually add the breadcrumbs until the mixture is moldable and we can shape our burgers.

Wet your hands a little to help. Once the burgers are shaped and the mixture is finished, place them in the freezer for about 5 minutes while you prepare the breading ingredients: mix the breadcrumbs and poppy seeds well.

Take the burgers out of the freezer and bread them with the prepared mixture.

Place the oil in a pan and heat it until it reaches the right temperature for frying. Finally, fry the burgers for about 3-4 minutes per side, until nicely golden.

Serve very hot!
