How do you make pasta with vegetable and tomato sauce?

Sauté onion and cook it with tomato sauce. Separately, sauté chopped eggplant, pepper and zucchini. Add the vegetables to the sauce, seasoning with cumin and paprika. Boil the pasta until al dente, drain it and stir it into the pot with the hot sauce to bring the flavors together before serving.

  • 320 g dried pasta
  • 1 eggplant
  • 1 small red bell pepper or half a large one
  • 1 medium zucchini
  • 1 small red onion
  • 700 g tomato sauce (3 cans or fresh tomatoes)
  • A pinch of sweet paprika
  • A pinch of baking soda
  • A pinch of cumin
  • 3-4 tablespoons extra virgin olive oil

Instructions

  1. Finely chop the onion and sauté it over gentle heat in a high-sided pot.

  3. When the onion is translucent, add the tomato sauce and cook for 15 minutes.

  4. Meanwhile, place all the vegetables in a non-stick pan and cook them over medium heat for about 15 minutes.

  5. Add the cumin, paprika, salt and a pinch of baking soda to the tomato sauce.

  6. After the vegetables have cooked for 15 minutes, add them to the tomato sauce.

  7. Bring water to a boil in a large pot for the pasta, add salt and cook the pasta according to the cooking time indicated on the package.

  8. Stew the whole sauce for another 15 minutes. At this point the pasta should also be ready, at the same time as the sauce. Now decide whether you want the sauce with pieces of vegetables or blended; if you prefer it blended, use an immersion blender. I prefer to leave the pieces whole. Place the pasta in the sauce and serve very hot. Note: If there is too much sauce, simply let it cool and then store it in the refrigerator for 2 or 3 days maximum. If desired, you can also freeze it in portions and thaw it when needed.
