Honey and Cinnamon Cookies

How do you make honey, cinnamon, and ginger cookies?
Mix flour, sugar, cinnamon, ginger, and baking powder in a bowl. Add butter, honey, and yogurt, kneading quickly until smooth. Chill the dough for 30 minutes, roll it out to 2 cm thick, and cut out the cookies. Bake at 160°C for 15 minutes, until the edges are golden.
I love the aroma and flavor of cinnamon; it reminds me of the Christmas season and all the exquisite spices we can enjoy during that time. These cookies are super easy and quick to make, with common ingredients you probably already have at home.
The screen will not turn off while you cook.
Servings: Makes 35–50 cookies, depending on the cutters
Ingredients
- 300 g type 00 wheat flour (all-purpose)
- 40 g cane sugar
- 1 pinch of salt
- 1 teaspoon ground ginger (about 2 g), optional
- 3 teaspoons ground cinnamon (about 6 g)
- 1 teaspoon baking powder for sweets (about 3.5 g)
- 100 g butter or vegetable margarine
- 50 g plain unsweetened yogurt
- 5 tablespoons honey (about 90 g)

Instructions
Start by sifting all the dry ingredients into a large bowl: flour, cinnamon, ginger, and baking powder. Add the pinch of salt and the sugar.

Mix well with a wooden spoon.

Add the butter or margarine, honey, and yogurt.

Quickly work the mixture by hand until you form a smooth, even dough.

The dough should look like this.

Wrap it in plastic wrap and let it rest in the refrigerator for 30 to 60 minutes.

Remove it from the refrigerator. Preheat the oven to 160°C (320°F). Place the dough on a surface covered with parchment paper, place another sheet of parchment paper on top, and roll it out with a rolling pin until it is about 2 cm thick.

Using one or more cookie cutters, cut out the cookies. Place them on a baking tray lined with parchment paper, leaving space between them, and bake for 12 to 15 minutes, until the edges are golden.

Remove them from the oven; even if they are still a little soft, that is fine—they will firm up as they cool. Let them cool completely and enjoy them with your favorite drink. Note: The cookies stay crisp for up to 7 days in a food tin.
