Vegan Burger Buns

How do you make fluffy vegan burger buns?
Prepare a pre-ferment with flour, water, and yeast; let it rest for one hour. Add the remaining flour, sugar, oil, and salt, kneading until you get a smooth dough. Let it rise until tripled, shape into 100 g buns, and let them rise again. Brush with plant milk, add sesame seeds, and bake at 180°C for 20 minutes.
I love this recipe because when we are craving a delicious burger, there is nothing better than a fresh, soft bun. Above all, without the alcohol smell we notice when we open a package of store-bought buns from the supermarket.
The screen will not turn off while you cook.
Servings: Makes 9 large buns or 12 small ones
Ingredients
- 300 g type 0 flour or type 0 Manitoba flour
- 200 g all-purpose 00 flour
- 15 g sugar
- 260 ml water
- 40 ml extra virgin olive oil
- 10 g fresh brewer’s yeast or 4 g activated dry yeast
- 11 g salt
- Sesame seeds for decorating

Instructions
Start by preparing the pre-ferment: in a large bowl, combine 50 g type 0 flour and 50 g 00 flour with 100 ml water and the yeast. The mixture will be quite sticky; that is normal.

Mix everything very well.

Cover and let rest for about 1 hour.

Until you see small bubbles beginning to form.

Next, add the remaining flours, almost all the water (reserve about 50 ml), and the sugar, then mix.

When the flour has absorbed all the water, add the oil. Mix vigorously until the oil is absorbed.

Finally, add the salt and the water you had reserved.

Mix well. Once you have a smooth dough, cover and let it rest for about 2-3 hours.

Until it has tripled in volume.

Place the dough on a work surface (no flour is needed) and begin dividing it into small pieces of about 100 g for large buns or 50-60 g for mini burgers.

Place them on a surface as you go.

With the palm of your hand, shape them into very smooth balls. Place them well spaced on a baking tray lined with parchment paper and let them rest for 40 minutes inside the oven with the light on.

Preheat the oven to 180°C (350°F). Remove the buns and brush them with warm plant milk, then sprinkle a little sesame seed over each bun. Let them rest for another 30 minutes.

Once the time has passed and the oven is hot, bake for 15 minutes on the second rack from the bottom. After the first 15 minutes, move the tray to the top rack for another 5 minutes to brown.

Once cool, cut them in half and enjoy our delicious soft buns with whatever you like best.
