Crispy golden phyllo rolls with sesame seeds for Vegan Spring Rolls

How do you make baked vegan spring rolls?

Sauté chopped onion, cabbage, zucchini, and carrot until softened; season and let cool. Place the filling on phyllo pastry sheets brushed with oil, fold in the ends, and roll up. Brush the rolls with more oil, sprinkle with sesame seeds, and bake at 180°C for 15–20 minutes until golden.

Delicious and perfect in a pinch, whether we are spending an evening with friends or want to take something practical to a picnic. They come together very quickly and are packed with vegetables. I made this recipe with some of my favorite vegetables, but you can actually use others according to your personal taste.

Servings: Makes 20–30, depending on the size

Ingredients

  • 2 packages phyllo pastry sheets
  • 250 g carrots
  • 1 medium onion
  • 200–300 g zucchini
  • 400 g Savoy cabbage or regular cabbage
  • 3 tablespoons extra virgin olive oil
  • Sesame seeds
  • ½ teaspoon salt
  • Pinch of black pepper
  • Extra virgin olive oil for brushing

Instructions

  1. Start by finely chopping the onion.

  2. Grate the carrot and zucchini.

  3. Finely shred the cabbage.

  4. Place the 3 tablespoons of extra virgin olive oil in a nonstick pan, wok, or medium pot and begin sautéing the onion over low heat until translucent.

  5. Add the cabbage to the pan.

  6. Cook for 5–10 minutes, until soft.

  7. Add the zucchini and carrot and cook for about another 5 minutes. Add the salt, a pinch of pepper, and a little sesame seed.

  8. Taste and adjust the salt if necessary. Let cool.

  9. Cut the phyllo pastry into squares, separate each layer, and brush them with extra virgin olive oil. On the final layer, place a couple of tablespoons of the cooked vegetables.

  10. Brush oil along the edges of the entire square.

  11. Fold one side of the square toward the center.

  12. Then fold in the side edges.

  13. Close it into a roll shape.

  14. Brush each roll with oil and place them on a baking tray lined with parchment paper. Sprinkle with a little sesame seed.

  15. Bake in a preheated oven at 180°C (350°F) for 15–20 minutes, until golden. You can enjoy them with a delicious sweet-and-sour sauce, soy sauce, or simply on their own—they are spectacular.
