Ingredients
- 1.2 kg potatoes with skin
- 200-250 ml unsweetened soy milk or dairy milk
- 70 g grated Parmesan cheese
- 100 g butter
- 1 teaspoon salt + extra for the water
- ¼ teaspoon black pepper
- Pinch of nutmeg

Instructions
Start by washing the potatoes and placing them in a large pot with plenty of salted water. Cook them for 20-30 minutes, depending on their size.

After the first 20 minutes, insert a fork into one of the potatoes to check if it is cooked, then turn off the heat or let them cook for a few more minutes.

Peel them while they are still hot because this makes the process easier. Place them in a pot and then mash them well with the help of a potato masher.

Add the butter and warm milk, starting with 200 ml, and continue mashing the potatoes. Since they will still be warm, the butter will melt immediately. Keep the pot over medium-low heat while carrying out these steps. If you want a softer mash, pour in the rest of the milk or a little more if you prefer it looser.

Sprinkle in the pepper, salt, and nutmeg, then mix.

Finally, add the Parmesan, stir well, and taste to adjust the salt and pepper.

Serve piping hot.
Enjoy your meal!
