How do you make healthy walnut and date truffles?

Soak the dates and blend them with walnuts, oats, cocoa, and coconut oil until you get a smooth dough. Shape into balls and refrigerate for one hour. Melt dark chocolate, mix it with chopped walnuts, and dip the chilled truffles in this coating. Let them rest on parchment paper until the chocolate sets.

Delicious little bites that provide so many vitamins and minerals, such as iron, potassium, calcium, and magnesium. The natural sweetness of dates allows us to make treats like these without adding sugar, and honestly, they do not need it—they are exquisite as they are. Very easy to make, and perfect to enjoy whenever a sweet craving strikes.

Servings: Makes 10–15, depending on the size

Ingredients

  • 150 g dates (20–25)
  • 60 g rolled oats
  • 120 g walnuts
  • 10 g unsweetened cocoa powder
  • 80 g dark chocolate bar
  • 10 ml melted coconut oil

Instructions

  1. Start by placing the dates in a bowl, add warm water, and let them soak for at least 30 minutes.

  2. Meanwhile, place 100 g of walnuts (set aside 20 g) and the rolled oats in a hand blender or food processor.

  4. Add the unsweetened cocoa powder to the food processor.

  5. Dry the dates and add them to the food processor until you get a smooth mixture. Pour in the coconut oil and mix well.

  6. Shape the mixture into balls of your desired size, then let them rest in the refrigerator for 30 minutes to 1 hour.

  7. After the resting time, melt the chocolate bar in a double boiler or in the microwave.

  8. Coarsely chop the remaining 20 g of walnuts with a knife. Add them to the melted chocolate and stir well.

  9. Take the bites out of the refrigerator and dip them one by one into the chocolate.

  10. Place them on a plate lined with parchment paper, let them cool, and then, if desired, place them in the refrigerator for a few minutes.
