Vin Brulè

How do you make Vin Brulè or spiced mulled wine?
Place red wine, sugar, spices (cinnamon, cloves, star anise, nutmeg), and orange and lemon peels without the white pith in a pot. Heat over medium-high heat and keep at a gentle simmer without boiling hard for 10 minutes to infuse. Strain and serve immediately in heat-resistant glasses.
I adore the Christmas season and the cold it brings, because I love special drinks with lots of spices that remind me of this time of year. There can be many variations according to our personal tastes; for example, adding cardamom, black pepper—in short, let imagination live! Its origins are disputed by several cities in Northern Europe, but the one certain thing is that it comes from places where winter cold is quite harsh. At first, it was used as a remedy for colds, now mainly for its delicious flavor. It literally means “burnt wine.” The alcohol content depends on the wine used; normally a full-bodied wine is used, such as Sangiovese, Barolo, or Cabernet. In other cities Lambrusco is also used, which is what I use because I prefer its flavor. About 80% of the ethanol evaporates during cooking.

Ingredients
- 1.5 liters Lambrusco Amabile wine
- 200 g cane sugar or white sugar
- Peel of 1 organic orange
- Peel of 1 organic lemon
- 3 cinnamon sticks
- 10 cloves
- 2 star anise

Instructions
Grate the nutmeg and set aside.

Carefully, using a potato peeler, remove the orange peel without the white part.

Repeat the same process with the lemon.

In a medium pot, place all the spices and the peels.

Pour in the wine and stir well.

Set the heat to medium-high and stir well.

Bring it to a gentle simmer without letting it boil hard, for about 10 minutes. Strain before drinking.

Enjoy very hot in a heat-resistant glass, because it is served very hot. Note: Once cold, it can be bottled and stored in the refrigerator for 2-3 days, but warm it before serving.
