How do you make vegan mini jam tartlets?

Mix flour, powdered sugar, baking powder, and lemon zest with oil and water until you obtain a soft dough. Line small molds with two thirds of the rolled-out dough and fill them with strawberry jam. Cover with crisscrossed strips of the remaining dough and bake at 180°C for 40 minutes until golden.

Exquisite, light little tartlets filled with delicious homemade jam. The dough gives us an exceptional, delicate flavor, and even though it is made without eggs or butter, it does not crumble and at the same time melts in your mouth. In this recipe I fill them with strawberry jam, but we can use whichever jam we like best.

Servings: For mini tartlets (approx. 10 cm diameter) or one medium tart of 24 cm diameter

Ingredients

  • 250 g type 0 flour or spelt flour
  • 70 g powdered sugar
  • 8 g baking powder
  • 1 pinch of salt
  • Zest of 1 organic lemon
  • 50-65 ml water
  • 80 ml sunflower oil
  • 250 g strawberry jam

Instructions

  1. Sift the flour, powdered sugar, and baking powder into a medium bowl, mix, and also add the pinch of salt.

  2. Add the grated and finely chopped lemon zest.

  3. Pour in the sunflower oil.

  4. Stir the ingredients.

  5. Add the water little by little, but not all of it.

  6. Knead, first with the help of a spoon and then with your hand, until you obtain a smooth, soft but not sticky dough. If it is too dry, add a little more water. The dough is ready when you can leave the marks of your fingers and it does not stick to your hand.

  7. Place a piece of parchment paper on a work surface, put 2/3 of the dough on top, cover with another sheet of parchment paper, and roll it out with a rolling pin until it is about ½ cm thick. Set the remaining dough aside.

  8. On the rolled-out dough, place each mold upside down and twist so the edges cut the right size. Turn the mold over again, grease it, and place the cut dough inside. Repeat until all the molds have their dough base.

  9. Still using parchment paper and the rolling pin, roll out the dough we had set aside and cut thin strips.

  10. Fill each dough-lined mold with strawberry jam and decorate with 3 strips of dough, then place another 3 in the opposite direction.

  11. Preheat the oven and bake at 180°C (350°F) for 40 minutes, or until golden. Let cool before unmolding, then enjoy our delicious tartlets.
