Vegan Margherita Cake

How do you prepare a fluffy vegan Margherita cake?
Whisk water, oil, and sugar until the crystals dissolve. Gradually add sifted flour, lemon zest, vanilla, and salt. Add baking powder at the end to activate the mixture. Pour the batter into a greased pan and bake at 180°C for 45-50 minutes. Let this light sponge cake cool before unmolding.
This delicious cake is one of the simplest I have ever made, and I dedicate it with much love to my beloved older sister, who loves simple yet flavorful cakes. I love it because it is incredibly light, with a delicious vanilla flavor and a hint of citrus. I also use it as a base for birthday cakes, because since it is so delicate, it pairs well with any creams we want to serve it with.
The screen will not turn off while you cook.
Servings: For a 24 cm pan
Ingredients
- 330 ml water
- 85 ml sunflower seed oil
- 200 g cane sugar
- Zest of 1 organic lemon (an organic orange can also be used)
- ¼ teaspoon vanilla powder
- A pinch of salt
- 300 g type 00, 0, or 1 flour
- 16 g baking powder

Instructions
Start by washing the lemon or orange and grating the zest, being careful not to include the white pith. Chop it finely and set aside.

Separately, in a medium bowl, pour in the water, oil, and sugar. Whisk until the sugar is well dissolved.

Then gradually add the sifted flour, stirring as you go so no lumps form.

Once you have finished adding the flour, beat until you obtain a smooth mixture.

Preheat the oven to 180°C (350°F). Add the lemon zest, vanilla, and pinch of salt. Mix.

Lastly, sift in the baking powder and stir well until incorporated.

Pour the mixture into a greased 24 cm pan.

Bake in the preheated oven for 45-50 minutes. Do the toothpick test, and if it comes out dry, remove from the oven and let cool for 15 minutes, then unmold and let cool completely.

Enjoy a delicious slice of cake on its own or with a scoop of ice cream.
