Thick Pistachio Hot Chocolate

How do you make thick pistachio hot chocolate?
Heat plant milk and mix it with pistachio cream and sugar. Add chopped vegan white chocolate and stir until melted. Gradually add cornstarch, whisking vigorously to avoid lumps, and cook while stirring for 3 minutes until thickened. Serve immediately, decorated with chopped pistachios.

Ingredients
- 750 ml unsweetened soy or brown rice plant milk
- 150 g vegan white chocolate
- 50 g cornstarch
- 60 g unsweetened pistachio cream
- 30 g cane sugar

Instructions
Pour the plant milk into a medium high-sided saucepan, heat over medium heat, and when it is warm, add the pistachio cream and stir well.

Add the sugar and mix well.

Break the white chocolate a little with your hands and add it to the saucepan.

Stir continuously until the chocolate melts.

Lastly, slowly add the cornstarch while stirring very quickly so no lumps form.

Stir continuously for 2-3 minutes, until you obtain the desired thickness. It should not be too thick because it thickens more as it cools, and we do not want a pudding. Remove from the heat and serve immediately, very hot, with chopped pistachios and, if you want it even more indulgent, with whipped cream.
