Sweet and Sour Tomato Sauce with Bell Pepper

How do you make sweet and sour tomato and pepper sauce?
Sauté chopped onion and bell pepper until tender. Add sugar and vinegar, cooking over high heat to evaporate the acidity. Stir in the tomato sauce and cook for 10 more minutes until reduced. Blend the mixture with an immersion blender for a smooth, even texture.
Here is a versatile sauce that we can use to accompany many of our balls, burgers, or even a salad. Delicious, delicate, and an original option. I love using it as a side for potatoes, whether fried or baked.

Servings: For 4 people
Ingredients
- 300 g tomato sauce (canned or bottled sauces are perfect)
- 250 g red bell pepper (about 1 or 2 medium peppers)
- 40 g onion
- A pinch of salt
- 2 tablespoons apple cider vinegar or white vinegar
- 1 tablespoon whole cane sugar
- Extra virgin olive oil

Instructions
Finely chop the onion.

Place it in a small pot or small nonstick pan over medium-low heat.

Dice the bell pepper into small cubes.

When the onion turns translucent, add the bell pepper.

After about 3-5 minutes, when they are well softened, add the sugar and vinegar. Turn the heat to medium-high so the acidic note of the vinegar can evaporate.

At this point, add the tomato sauce.

Cook for about 10 minutes, until the sauce has reduced, then add a pinch of salt.

At this point, you can blend the sauce with an immersion blender.

Ready to enjoy with your favorite recipe.
