Square Sandwich Bread

Rectangular sandwich loaf with a golden crust and soft white crumb sliced for Square Sandwich Bread

How do you make homemade square sandwich bread?

Knead flour, water, honey and yeast; add salt and oil, kneading for 10 minutes. Let it ferment for 40 minutes, then shape the bread by tightening the dough and place it in a greased rectangular mold. Let it rise until doubled in volume and bake at 200°C for 45 minutes, finishing the baking out of the mold to brown.

There is no better homemade sandwich than one made with fresh square bread; it comes together in just a few steps, with no effort, using ingredients we can easily have at home, and our sandwich will be the best in the world.

Servings: For one loaf of approx. 1,750 g

Ingredients

  • 1 kg type 0 flour
  • 15 g fresh brewer's yeast or 5 g activated dry yeast
  • 630 ml water
  • 100 g butter or 80 g extra virgin olive oil
  • 30 g honey
  • Extra virgin olive oil
  • 22 g salt
Recipe ingredient

Instructions

  1. Place the flour, about 600 ml of water, the honey and the yeast in a large bowl, and start stirring well with a spoon until all the ingredients are incorporated. If using dry yeast, add it already activated together with 450 ml of water.

    Recipe step
  2. After a few minutes, add the salt, the remaining 30 ml of water and finally the oil or butter.

    Recipe step
  3. Mix everything thoroughly for about 10 minutes.

    Recipe step
  4. Let the dough rest in a bowl covered with plastic wrap for about 40 minutes, or until doubled in volume.

    Recipe step
  5. After that time, place it on a work surface and divide it into as many loaves as you want to make; with this amount of dough, for example, I make one loaf for a square bread mold or two small loaf-cake molds.

    Recipe step
  6. Work the dough and stretch it so it fits the size of your mold. Pull the dough toward you two or three times, folding it over itself, so it becomes compact and well shaped. You can use a dough scraper, since the dough is quite sticky. Little by little, as you work it, it will lose that texture and begin to firm up.

    Recipe step
  7. Grease the mold well and place the dough inside with the seam side facing up.

    Recipe step
  8. Close it with the lid and let it rise until doubled in volume. If you do not have this mold, simply let it double.

    Recipe step
  9. When you see it has doubled, heat the oven to 200°C (395°F). Once it reaches temperature, bake for 30 to 45 minutes depending on the size of your mold.

    Recipe step
  10. Remove it from the mold and bake for another 15 minutes, or until golden. Let it cool completely and cut it into slices to enjoy in sandwiches, with your favorite spread or jam.
