Pancakes with Banana Sauce

How do you make vegan pancakes with banana sauce?
Prepare the batter by mixing flour, sugar, baking powder, cinnamon, soy milk and coconut oil. Cook the pancakes in a pan until golden on both sides. Separately, caramelize banana slices in hot maple syrup with cinnamon and serve them over the stacked pancakes for a sweet breakfast.
Delicious for starting the day well, light and tasty. Let's get to work.

Servings: Makes 8 pancakes
Ingredients
- 150 g type 00 flour
- 50 g cane sugar
- 200 ml soy milk
- 1 teaspoon melted coconut oil
- ½ teaspoon baking powder (3 g)
- Maple syrup to taste
- 3 bananas

Instructions
Sift the flour and baking powder into a medium bowl.

Add the sugar.

Add cinnamon to taste and mix well.

Add the soy milk little by little, mixing so no lumps form. Finally, add the coconut oil.

When the mixture is ready, let it rest for about 10 minutes.

Meanwhile, start preparing the banana sauce. Slice the bananas, not too thinly.

Preheat a non-stick pan or small saucepan, add 3 tablespoons of maple syrup and add the bananas.

Let them cook for a couple of minutes and turn them over, sprinkle cinnamon to taste and set aside.

In another non-stick pan, spread a tablespoon of coconut oil over the whole surface and pour two tablespoons of batter for each pancake.

After 2 or 3 minutes, little holes will appear on the surface of the pancake.

When the edges are also golden, flip the pancake and cook for another 2 or 3 minutes.

Continue like this until the mixture is finished. Stack them one on top of another and then serve with the banana sauce on top. Variations: We can enjoy them with the fruit we like best; for example, by replacing the bananas with 250 g of strawberries, we can create a strawberry sauce using the same procedure.
