Mini Carrot Burgers with Spices

How do you make carrot and spice burgers?
Process carrots and onion; mix them with parsley, spices, oil and chickpea flour until you get a smooth mixture. Shape the burgers and bake them at 180°C for 15 minutes per side, brushed with oil, or cook them in a pan until golden, serving them hot as a nutritious main course.
These soft carrot burgers, flavored with curry, ginger and hot chili (optional), are baked, super tasty and easy to prepare. I recommend making plenty because you will fall in love with their special flavor. If children will also be eating them, I recommend omitting the chili, and they will love them.
The screen will not turn off while you cook.
Servings: Makes 12-16 medium mini burgers
Ingredients
- 400 g carrots
- 100 g chickpea flour
- 1 onion
- 1 small bunch parsley
- 2 tablespoons extra virgin olive oil
- 1 tablespoon curry powder
- ½ teaspoon ground ginger
- A pinch of baking soda

Instructions
Clean and peel the carrots and onion, then cut them into pieces. Place the carrots in a mixer or food processor and then the onion separately, so they are very finely chopped. If you do not have a food processor, grate the carrots and finely chop the onion.

Finely chop the parsley. Next, place all the chopped ingredients in a bowl and season them with oil, salt, pepper, curry, ginger, hot chili (optional), garlic (optional) and baking soda. Mix well and add the sifted chickpea flour, continuing until you have a smooth mixture. If you do not like the taste of raw onion, you can cook it in a non-stick pan with one tablespoon of extra virgin olive oil over low heat for about 10 minutes, until translucent; let it cool and add it with the other ingredients.

Preheat the oven to 180°C (350°F). Shape the burgers by taking a little of the mixture and forming small balls, then gently flattening them with your fingers to make burger shapes.

Place them on a baking tray already lined with parchment paper and bake for about 15 minutes, after brushing them with oil. After that time, take them out, flip them, brush with a little oil and put them back in for another 15 minutes. Serve hot! Note: You can also prepare them in a pan, about 4 minutes per side, until golden.
