Kiwi Cake with Chocolate Chips

How do you make kiwi cake with chocolate chips?
Mix plant-based milk, oil, sugar and vanilla until dissolved. Gradually incorporate the sifted flours and ground almonds. Fold diced kiwis and chocolate chips into the batter. Pour into a greased pan, decorate with kiwi slices and bake at 180°C for 45-50 minutes.
A delicious cake, full of fruit and with the indulgence that only chocolate can bring.
The screen will not turn off while you cook.
Servings: For a 26 cm pan
Ingredients
- 250 g type 0 flour or whole wheat flour
- 50 g rice flour
- 150 g whole cane sugar
- 300 ml brown rice milk (or soy milk)
- 50 g almonds
- 50 ml melted coconut oil
- 1 packet of baking powder for cakes (about 16 g)
- A pinch of vanilla powder
- 5 kiwis
- 100 g chocolate chips

Instructions
Start by grinding the almonds in a blender.

Grind them until they are almost a flour, with a few small pieces remaining.

Sift the type 0 flour or whole wheat flour and the rice flour into a large bowl.

In another bowl, mix the milk and vegetable oil.

Add the sugar and vanilla powder to the liquids and mix very well until the sugar lumps have fully dissolved.

Gradually pour the liquids into the flours, mixing continuously by hand or with an electric whisk.

Mix thoroughly, making sure no lumps form.

Peel the kiwis and cut three of them into small cubes, while slicing the other two into rounds to use for decoration.

Add the diced kiwis, ground almonds and chocolate chips to the cake batter.

Stir well; if it seems too dry, add a splash of plant-based milk.

Finally, add the sifted baking powder and mix well. Preheat the oven to 180°C (355°F).

Grease the 26 cm pan, flour it and pour in the cake batter. Decorate with the kiwi slices and finally sprinkle a little whole cane sugar over the cake. Bake for 45-50 minutes, checking doneness with a toothpick. Let it cool and, once completely cold, remove it from the pan. All that is left is to enjoy it with your favorite tea or a delicious cup of coffee, and for the little ones at home, even with a scoop of ice cream.
