Flourless Vegan Oat Cake

How do you make flourless vegan oat cake?
Lightly process the oats and mix them with chopped dried fruit, spices, and baking powder. Add apple purée, plant-based milk, maple syrup, and coconut oil. Let the mixture hydrate for 20 minutes, pour it into a lined mold, and bake at 180°C for 35–40 minutes until firm and golden.
This delicious cake comes together in 5 minutes; it is super quick and healthy, perfect for a spectacular breakfast that will recharge our energy and keep us satisfied all morning. For this recipe I use 3 types of dried fruit, but if you only have one or two at home, that is fine too.
The screen will not turn off while you cook.

Ingredients
- 300 g whole oats
- ¼ teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon ground cinnamon
- 50 g raisins
- 50 g dried cranberries
- 50 g dried apricots
- 270 ml unsweetened almond or rice plant-based milk
- 170 ml maple syrup
- 40 ml melted coconut oil
- 1 teaspoon vanilla extract or ¼ teaspoon vanilla powder

Instructions
Chop all the dried fruit into small pieces; if using apricots, chop those, while the cranberries and raisins can be left as they are.

Place the oats in a mixer and process for a few seconds; they do not need to become flour. Set aside.

Wash, dry, and cut the apple into large pieces. Place it in the mixer with a very small amount of the total plant-based milk.

Blend until you obtain an apple purée. Set aside.

In a large bowl, place the oats, salt, baking powder, ground cinnamon, and dried fruit. Stir well.

Pour in the plant-based milk, maple syrup, and melted coconut oil. Mix thoroughly.

Cover and let rest for 15–20 minutes. When you notice that both the oats and the fruit have hydrated, stir again. Line the mold with parchment paper and pour in the mixture.

Preheat the oven to 180°C (350°F). Bake for 35–40 minutes. When it looks golden, remove it from the oven.

Let it rest for 10–15 minutes, remove it from the mold, and let it cool completely before enjoying it with your favorite drink. It can be stored for 2–3 days in an airtight container.
