Flourless Blueberry Cookies

How do you make flourless oat and blueberry cookies?
Grind the oats into flour and blend the bananas with plant-based milk. Mix both preparations with yogurt until smooth. Spoon portions of dough onto a tray, place fresh blueberries on each one, and bake at 180°C for 25-30 minutes. Let cool completely so they set.
Indulgent, delicious, and super easy to make, without wheat flour, full of fruit and natural flavors. For a breakfast fit for royalty or a healthy snack.
The screen will not turn off while you cook.
Servings: Makes 12-14 cookies
Ingredients
- 4 ripe bananas
- 400 g whole rolled oats
- 200 ml unsweetened brown rice or soy plant-based milk
- 350 g plain soy yogurt

Instructions
Start by placing the rolled oats in a mixer or food processor.

Grind them until you obtain a fine flour. Place it in a bowl.

Place the bananas and plant-based milk in the mixer or blender.

Blend until you obtain a smooth mixture.

Transfer the mixture to a medium bowl and add the oat flour.

Pour in the yogurt.

Mix well and let rest.

Meanwhile, wash and dry the blueberries.

Preheat the oven to 180°C. Place parchment paper on a baking tray and spoon 3-4 tablespoons of mixture for each cookie; distribute a few blueberries over each one.

Bake for 25-30 minutes until they look golden. Let cool completely before removing from the tray.
