How do you make flourless oat and blueberry cookies?

Grind the oats into flour and blend the bananas with plant-based milk. Mix both preparations with yogurt until smooth. Spoon portions of dough onto a tray, place fresh blueberries on each one, and bake at 180°C for 25-30 minutes. Let cool completely so they set.

  • 4 ripe bananas
  • 400 g whole rolled oats
  • 200 ml unsweetened brown rice or soy plant-based milk
  • 350 g plain soy yogurt

  1. Start by placing the rolled oats in a mixer or food processor.

  2. Grind them until you obtain a fine flour. Place it in a bowl.

  5. Transfer the mixture to a medium bowl and add the oat flour.

  8. Meanwhile, wash and dry the blueberries.

  9. Preheat the oven to 180°C. Place parchment paper on a baking tray and spoon 3-4 tablespoons of mixture for each cookie; distribute a few blueberries over each one.
