How do you make buffet-style mini pizzas for parties?

Prepare a classic pizza dough and let it rise for two hours. Divide it into 40 g portions, shape into balls, and let them rest again. Place them in muffin molds, pressing the center to form little baskets. Fill by alternating layers of grated cheese and tomato sauce, top with mozzarella, and bake at 220°C for 15–20 minutes.

A super practical recipe for a party or special celebration. They are made in little time, giving us an incredibly indulgent appetizer or tapa with the exquisite pizza flavor we all love, served in convenient individual portions.

Servings: Makes 35–40 mini pizzas

Ingredients

  • 1 kg type 1 wheat flour
  • 600 ml water
  • 10 g fresh brewer's yeast
  • 23 g salt
  • 40 ml extra virgin olive oil
  • 350 g grated cheese
  • 350 ml tomato sauce
  • 350 g mozzarella
  • Extra virgin olive oil as needed

Instructions

  1. Start by sifting the flour into a large bowl, then add a little more than half of the water, until all of it has been absorbed.

  2. Add the yeast with a little more water and mix until it is well incorporated into the flour.

  3. Next, add the salt and the remaining water, and mix.

  4. Finally, pour in the oil.

  5. Knead until all the oil has been absorbed. Once you have a smooth dough, place it in a large bowl, cover it, and let it rest for 2 hours.

  6. While the dough rests, prepare the tomato sauce: add a pinch of salt and oregano, stir well, and set aside.

  7. After the resting time, place the dough on a work surface.

  8. Using a spatula or dough cutter, divide it into pieces of about 40 g each; you will get approximately 35–40 pieces.

  9. Take the pieces one by one and bring each edge toward the center. Then, with the palm of your hand, shape them into balls, gently pressing each piece against the surface.

  10. Once all the balls are shaped, cover them and let them rest for 1½ hours.

  11. After the resting time, grease the muffin pan with a pastry brush and a little extra virgin olive oil. Place each ball inside, press it down, and shape it into a little basket. Inside each one, add a little grated cheese, then tomato sauce; repeat twice, that is, cheese, sauce, cheese, sauce.

  12. Finally, add a little mozzarella. Preheat the oven to 220°C (430°F).

  13. Bake for 15–20 minutes.
