How do you make apple and almond cookies?

Mix flour, cornstarch, baking powder, and cinnamon with ground almonds. Emulsify oil, water, and sugar, then add them to the dry ingredients. Add chopped apples previously macerated in lemon. Shape the dough into balls, coat them in sugar, and bake at 180°C for 20 minutes until golden and crisp.

I love apple season; it is the perfect excuse to try every possible preparation with this wonderful fruit. This recipe wins me over with its combination of apple, cinnamon, and almonds. They are very easy to prepare, ideal for making with the little ones at home. Perfect for a sweet snack alongside our favorite warm drink.

Servings: Makes about 25–30 cookies

Ingredients

  • 2 small apples, about 200 g
  • 200 g type 1 flour
  • 60 g almonds
  • 60 g cornstarch
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • 40 g whole cane sugar
  • 5 g instant baking powder for sweets
  • 80 ml melted coconut oil
  • 60 ml water
  • 1 organic lemon (juice and zest)
  • powdered sugar

Instructions

  1. Start by placing the almonds in a mixer and chopping them.

  2. Chop until they are very fine.

  3. Peel and finely chop the apples, then place them in a bowl. Grate the lemon zest and set it aside. Squeeze the lemon and pour the juice over the freshly cut apples.

  4. In a large bowl, sift the flour, baking powder, cinnamon, and cornstarch; stir.

  5. In another bowl, pour in the oil and water, then add the sugar. Mix well until the sugar dissolves.

  6. In the bowl with the sifted dry ingredients, add the ground almonds and lemon zest. Mix.

  7. Gradually pour the liquids over the dry ingredients and mix with your hands until you have a smooth dough.

  8. Drain the apples well.

  9. Add them to the cookie dough without the juice, and continue mixing well.

  10. Take small portions of dough and set them aside.

  11. Preheat the oven to 180°C (350°F). Place powdered sugar in a small bowl and gently roll each slightly flattened ball in it.

  12. Place them on a baking tray previously lined with parchment paper. Bake for 20 minutes.

  13. Let cool and sprinkle with a little powdered sugar.
