Lentil Meatballs

How do you make lentil meatballs in sauce?
Blend cooked potatoes with sautéed onion and pepper and half of the lentils. Mix with the remaining whole lentils and breadcrumbs. Shape the meatballs, refrigerate and sear them in a pan. Finally, carefully add them to a simmering tomato sauce to finish cooking and serve.
These meatballs are vegan. Follow the recipe step by step and you will see how delicious and light they are, and best of all, perfectly shaped.

Ingredients
- 480 g cooked lentils
- 450 g potatoes
- 1 red bell pepper
- 1 red onion
- 1 tablespoon fresh or dried rosemary
- 1 small red onion
- 720 g tomato sauce (3 cans)

Instructions
Clean the potatoes, cut them into small cubes and steam them. Do not wash the potatoes before placing them in the steamer because we need their starch. They will be ready when they are soft and sticky. While the potatoes are cooking, place the onion in a non-stick pan. Drain as much liquid as possible from the lentils and set aside.

After 3-4 minutes, cut the bell pepper into small cubes and add it to the pan with the onion. Cook for 5 minutes.

Once both the onion and bell pepper are cooked, place in a blender or food processor: half of the lentils, all the potatoes, half of the cooked onion and bell pepper. Add a pinch of salt and blend until a dough forms.

Place the dough in a bowl and incorporate the other half of the lentils and the rosemary, mixing everything very well.

Add a little breadcrumbs so the dough is easy to work with your hands.

Start preparing the sauce by placing the other half of the onion in a small pot with a couple of tablespoons of extra virgin olive oil. Cook over low heat.

After about 5 minutes, add the tomato sauce and let it cook until we finish the meatballs.

Shape the meatballs and, when the dough is finished, place them in the refrigerator for 10 minutes.

Stir the sauce a little, then add a little marjoram, either fresh or dried, salt, pepper and basil to taste.

Take the meatballs out of the refrigerator and place them in a non-stick pan without oil over medium heat. Turn them very gently after about 4-5 minutes.

Once they have been turned, gently add them to the tomato sauce. Serve very hot.
