Cauliflower with Cheese Sauce

How do you make cauliflower gratin with cheese sauce?
Steam the cauliflower florets. Make a béchamel by sautéing garlic and flour in margarine, then adding plant-based milk and cream until thickened; melt scamorza cheese into it. Pour the sauce over the cauliflower in a baking dish, cover with Parmesan and gratin in the oven at 190°C for 40 minutes.
This is a flavorful recipe, ideal to accompany some light vegetable meatballs, a salad, or anything we like best. I make the sauce like a simple béchamel enriched with scamorza cheese, which has a delicate flavor and melts very well, but you can make it with another cheese you prefer. You can even use different kinds you have in the refrigerator so they do not go to waste.
The screen will not turn off while you cook.

Ingredients
- 700 g cauliflower
- 1 garlic clove (optional)
- 50 g flour
- 100 g plant-based margarine or plant-based butter
- 650 ml unsweetened soy drink
- 350 ml plant-based cooking cream
- 300 g scamorza-style cheese or another good melting cheese
- 80 g Parmesan cheese

Instructions
Start by cleaning the cauliflower well: wash it, remove the leaves and cut away the toughest part. Place it in a pot to steam for about 10 minutes.

Meanwhile, start the béchamel sauce. In a pot, add the margarine or butter, and when it is almost completely melted, add the very finely chopped garlic and incorporate the flour.

Cook the flour for 3-5 minutes, until it has absorbed all the margarine. At this point, add the cream and plant-based drink a little at a time, mixing vigorously so no lumps form.

When a smooth, lump-free mixture has formed, cook until the sauce is thick but not too thick, then turn off the heat. Add the cheese cut into small pieces, pepper, and adjust the salt if necessary.

Preheat the oven to 190°C (375°F). Grease a baking dish and place the cauliflower inside; you can use one large dish or two medium ones.

Pour the sauce over the cauliflower.

Finally, sprinkle with the Parmesan.

Bake for 35 minutes. Then turn on the oven grill setting and leave it for another 5 minutes until golden. Wait a few minutes for the flavors to settle, then serve.
