Tofu and Pea Bites with Saffron Sauce

How do you make tofu and pea bites?
Hydrate the couscous and mix it with tofu, cooked peas and blended spices until you have a workable mixture. Form small balls, coat them in almond flour and bake at 180°C for 20 minutes. Serve the hot bites with a thick sauce made on the stove with soy milk, saffron and cornstarch.
A true surprise: I am sure you will love the pairing of tofu and peas with saffron, a delicate flavor and a melt-in-your-mouth texture. In this recipe we use one of the most versatile ingredients in vegetarian or vegan cooking.

Servings: Serves 4, about 24 bites
Ingredients
- 250 g plain tofu
- 150 g cooked peas
- 100 g couscous
- 115 ml boiling water
- 20 g almonds
- 20 ml extra virgin olive oil
- 250 ml unsweetened soy drink (or vegetable broth)
- 15 g cornstarch
- 1 sachet powdered saffron

Instructions
Start by placing the couscous in a small bowl with half a teaspoon of extra virgin olive oil. Stir well so the oil is incorporated, then pour in the boiling water with a pinch of salt, cover and set aside. After 5 minutes, once all the water has been absorbed, fluff well with a fork to separate the grains. Let cool.

Cut the tofu into small cubes and, when the couscous is warm, place the tofu cubes and half of the cooked couscous in a food processor or blender. Also add the cooked and cooled peas, basil and extra virgin olive oil. Blend everything.

Once all the ingredients are well blended, transfer them to a large bowl that allows you to work the mixture. Add the remaining couscous, salt and pepper to taste. Mix well until all the ingredients are fully incorporated. If the mixture is too dry, add a drizzle of oil until it is workable.

Place the almonds in the processor and grind them until they become a flour. Set aside.

Now moisten your hands and begin shaping the bites. Take a little of the mixture and make balls, gently flattening them with your fingers to shape them. Preheat the oven to 180°C (350°F). Once all the mixture has been shaped, coat the bites in the freshly made almond flour.

Line a baking tray with parchment paper and place all the bites on it.

When the oven is hot, bake for 15 minutes, then switch to the grill function and leave them for another 5 minutes.

While they bake, prepare the sauce. Place all the sauce ingredients in a medium saucepan: the soy drink or vegetable broth, saffron, cornstarch and salt to taste. Mix well.

Place on the stove and cook over medium heat until you reach the desired consistency.

Serve the bites very hot with the saffron sauce.
