Vegan Purple Gnocchi

How do you make vegan purple potato gnocchi?
Boil the purple potatoes with their skins on until soft, then peel and mash them while still warm. Let the mash cool completely before gradually mixing it with flour to form a soft dough. Cut the gnocchi and cook them in salted boiling water; remove them with a slotted spoon when they float and serve with your favorite sauce.

Besides their special color, purple potatoes are rich in antioxidants, vitamin C, minerals, potassium, and other properties. I guarantee you a spectacular dish in just a few steps. You can serve them with your favorite ready-made sauce.

Ingredients
- 1 kg purple potatoes
- 200-250 g type 2 wheat flour

Instructions
Wash the potatoes very well, carefully removing any traces of soil. Place them, with the skin on, in a pot with enough cold salted water. Cook for 20-25 minutes, depending on the size of the potatoes. Before removing them from the heat, insert a fork to check that they are cooked.

Once cooked, run them under cold water to stop the cooking and help them cool slightly.

Mash them while still warm.

Once all the potatoes are well mashed, taste them to adjust the salt and sprinkle with a little pepper. Set aside to cool completely. This step is very important because if the potatoes are cold, they will not absorb as much flour.

On a well-floured surface, place small amounts of cold potato and gradually add small amounts of flour to make the gnocchi dough.

Now that the dough is ready, prepare to shape the gnocchi.

Roll the dough into strips. If it is too soft, gradually add pinches of flour. Cut into small pieces.

Once all the dough is used, set the gnocchi aside. Heat water in a pot until it boils, add salt, and gradually add small handfuls of gnocchi. They will take two or three minutes, and as they rise to the surface, remove them from the water.

Continue this process until all the dough is used. Place them in a bowl with your favorite sauce; I used tomato sauce and tofu. Serve very hot.
