Apple and Almond Cake

How do you make vegan apple and almond cake?
Beat plant-based milk, oil, and sugar until combined. Mix the flours, cinnamon, and baking powder, then add the liquids and ground almonds. Fold chopped apples into the batter, pour into a pan, and decorate with apple slices and whole almonds. Bake at 180°C for 45 minutes, until cooked through.
There are thousands of apple cake recipes; every family has its own, and well, this is mine. Definitely my favorite cake: apple, cinnamon, and almonds together are simply something I love. It is quick to prepare, and the aroma that will fill our home is priceless.
The screen will not turn off while you cook.
Servings: For a 24 cm diameter cake pan
Ingredients
- 250 g type 0 flour or whole wheat flour
- 50 g brown rice flour
- 55 g ground almonds
- 145 g whole cane sugar
- 1 packet instant baking powder for sweets
- 1 pinch ground cinnamon
- 1 pinch vanilla powder
- 1 pinch of salt
- A small handful of whole almonds
- 50 g sunflower oil or melted coconut oil
- 300 ml unsweetened almond, oat, or soy milk
- 5 small apples or 3 medium apples (about 450 g)

Instructions
Pour the plant-based milk, oil, and sugar into a mixer and beat well so the sugar dissolves and everything is well combined.

In a large bowl, sift the two flours, cinnamon, and vanilla. Mix well.

Gradually add the liquids from the mixer (milk, oil, and sugar) and mix well.

Add the ground almonds and mix well, either by hand or with a hand whisk, so there are no lumps.

Peel 2 or 3 small apples, or 1½ medium apples, and chop them into small cubes.

Add the sifted baking powder and the pinch of salt to the batter, and stir well.

Preheat the oven to 180°C (350°F). Fold the chopped apples into the batter.

Mix well. The batter is fairly thick, but if it looks too dry, add a splash of plant-based milk.

Take the pan, grease it, and pour the batter inside. Peel the remaining apples, cut them into thin slices, and decorate the cake however you like. Add a few whole almonds as well and sprinkle with a little whole cane sugar.

Bake for 45 minutes at 180°C (350°F). Check doneness with a toothpick before removing from the oven. Let cool for 15 minutes before unmolding. Once completely cold, enjoy it with your favorite drink. Add a few whole almonds as well and sprinkle with a little whole cane sugar.
