Egg-Free Costa Rican Sweet Arepas

How do you make egg-free Costa Rican sweet arepas?
Mix whole wheat and white flours with baking powder and salt. Add plant milk, condensed milk, and melted butter until smooth. Let the batter rest for 10 minutes. Cook portions in a greased skillet over medium heat for 3 minutes per side, flipping when the edges are golden and bubbles appear.
Arepas are one of my favorite dishes; when I want to feel like I am at my mom's house, I make them with a delicious Costa Rican drip coffee. I prepare this version without eggs and, instead of sugar, with condensed milk, which gives it spectacular creaminess and flavor.
The screen will not turn off while you cook.
Servings: For 15-20 arepas
Ingredients
- 200 g whole wheat flour
- 150 g type 00 all-purpose flour
- 1.5 g baking powder
- Pinch of salt
- 1 can condensed milk
- 300 ml unsweetened plant milk
- 30 g plant-based butter

Instructions
Sift both types of flour, the baking powder, and the pinch of salt into a large bowl. Mix. Add the plant milk and condensed milk. Stir well until you obtain a smooth batter.

Melt the butter, let it cool slightly, and pour it over the batter.

Mix well and let rest for about 10 minutes.

In a medium nonstick skillet, place half a teaspoon of butter and, once melted, add one or two tablespoons of batter, depending on the size you want to make them.

Cook for about 3 minutes over medium heat, until you notice the edges are golden and small bubbles appear in the center.

Flip and cook for another 3 minutes or so.

Serve very hot with a delicious hot drink.
