This delicious cake comes together in 5 minutes; it is super quick and healthy, perfect for a spectacular breakfast that will recharge our energy and keep us satisfied all morning. For this recipe I use 3 types of dried fruit, but if you only have one or two at home, that is fine too.

Ingredients

  • 300 g whole oats
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 50 g raisins
  • 50 g dried cranberries
  • 50 g dried apricots
  • 270 ml unsweetened almond or rice plant-based milk
  • 170 ml maple syrup
  • 40 ml melted coconut oil
  • 1 teaspoon vanilla extract or ¼ teaspoon vanilla powder
Recipe ingredient

Instructions

  1. Chop all the dried fruit into small pieces; if using apricots, chop those, while the cranberries and raisins can be left as they are.

    Recipe step
  2. Place the oats in a mixer and process for a few seconds; they do not need to become flour. Set aside.

    Recipe step
  3. Wash, dry, and cut the apple into large pieces. Place it in the mixer with a very small amount of the total plant-based milk.

    Recipe step
  4. Blend until you obtain an apple purée. Set aside.

    Recipe step
  5. In a large bowl, place the oats, salt, baking powder, ground cinnamon, and dried fruit. Stir well.

    Recipe step
  6. Pour in the plant-based milk, maple syrup, and melted coconut oil. Mix thoroughly.

    Recipe step
  7. Cover and let rest for 15–20 minutes. When you notice that both the oats and the fruit have hydrated, stir again. Line the mold with parchment paper and pour in the mixture.

    Recipe step
  8. Preheat the oven to 180°C (350°F). Bake for 35–40 minutes. When it looks golden, remove it from the oven.

    Recipe step
  9. Let it rest for 10–15 minutes, remove it from the mold, and let it cool completely before enjoying it with your favorite drink. It can be stored for 2–3 days in an airtight container.

Enjoy your meal!
