Surprise Baked Fennel Parcels

How do you make surprise baked fennel parcels?
Slice the fennel and mix it in a bowl with halved olives, capers, olive oil, salt, and pepper. Divide the mixture onto pieces of parchment paper, close them into parcels tied with kitchen twine, and bake at 180°C for 20 minutes so they steam in their own juices.
This incredible recipe is a delight for both the palate and the eyes, excellent for when we want to impress our guests with its distinctive presentation. Fresh, indulgent, and super easy to make; in just a few minutes, we have a delicious side dish.
The screen will not turn off while you cook.
Servings: Serves 4–6
Ingredients
- 2 medium fennel bulbs
- 150 g black olives
- 50 g capers
- ¼ teaspoon salt
- Pinch of black pepper
- 3 tablespoons extra virgin olive oil

Instructions
Start by washing the fennel bulbs, removing the stalks, and cutting each one into slices. Place them in a large bowl and set aside.

Cut each olive in half and set aside.

Add all the ingredients to the bowl with the fennel, including the oil, salt, and pepper. Mix thoroughly.

Cut pieces of parchment paper, enough to wrap the fennel.

Tie each little parcel closed with kitchen twine.

Bake for 20 minutes at 180°C (350°F). Serve the fennel parcels piping hot.
