How do you make vegan chocolate chip cookies?

Form balls with your hands, place them spaced apart on a baking tray, and bake at 200°C for 10-12 minutes until the edges are golden. Let cool.

This time I bring you a recipe for exquisite vegan chocolate cookies, super easy to prepare and with that indescribable homemade something that we all love.

Servings: Makes 18-20 cookies

Ingredients

  • 400 g type 1 or 2 wheat flour, or white spelt flour
  • 120 g sugar
  • 100 g 70 or 75% dark chocolate (1 bar)
  • 180 g melted coconut oil at room temperature (melt it in the microwave)
  • 100 ml oat or rice milk with no added sugar
  • Pinch of salt
  • 12 g baking powder

Instructions

  1. Sift the flour into a medium bowl and set aside.

  2. Sift the baking powder over the flour, add the pinch of salt, and mix. Set aside.

  3. In another bowl, pour in the oil, plant-based milk, and sugar. Stir well until the sugar is completely dissolved.

  4. Add the dry ingredients to the liquid ingredients and mix well.

  5. Coarsely chop the dark chocolate bar.

  6. Add it to the dough.

  7. Stir well, and you will see that the dough is quite moist.

  8. Preheat the oven to 200°C (395°F). Take small portions of dough with your hands and form balls in the size you like best. Place them on a baking tray lined with parchment paper, well spaced apart, because they will spread during baking. If desired, sprinkle a little coarse salt on each one.

  9. Bake for 10-12 minutes, depending on your oven, until you see the edges are golden. Remove from the oven and let cool completely before taking them off the tray.

  10. Once cold, you can place them in an airtight container or tin, and they will keep for several days as if freshly made.
