Hamburger Buns

How do you make soft hamburger buns?
Mix flour, yeast, water, dehydrated mashed potato flakes, and honey. Add egg, sugar, salt, and softened butter; knead until smooth and let rise for 90 minutes. Divide into portions, shape into buns, and let them double in size on a tray. Brush with egg or milk and bake at 240°C for 10-15 minutes until golden.
Besides being quite simple, this recipe gives us delicious little buns that are soft and delicate in flavor. We usually think about the burger filling and pay little attention to the bread, which should actually be the most important part.
The screen will not turn off while you cook.
Servings: Makes 6-8 buns, depending on the size
Ingredients
- 500 g type 0 wheat flour
- 20 g potato flakes (dehydrated mashed potato mix)
- 1 medium egg
- 280 ml water
- 10 g whole cane sugar
- 15 g salt
- 10 g fresh brewer's yeast
- 10 ml honey
- 25 g butter
- Optional: sesame seeds
- 1 egg or milk for brushing

Instructions
Sift the flour into a large bowl.

Crumble the fresh yeast and add it to the flour.

Pour in most of the water and add the dehydrated mashed potato flakes. Mix.

Add the honey and mix.

Add the egg and sugar. Mix so they are well incorporated into the dough.

Add the salt and pour in the rest of the water, then knead.

Finally, add the melted or at least softened butter and knead until you have a smooth dough.

Knead until the dough is no longer sticky, smooth, and uniform. Place it in a bowl and cover it. You can place it in the oven with the light off. Let rest for 1½ hours, until doubled in volume.

Once doubled in volume, take the dough and place it on a floured surface. Divide it into 6 or 8 portions, depending on the bun size you want.

Take each portion, bring each edge toward the center, then place it on the surface and use the palm of your hand to make semicircular movements until you have perfect balls.

Place them on a tray lined with parchment paper. Once they are all arranged, cover and let rest until doubled in size.

Check after about 1 or 2 hours to make sure they have doubled in volume.

Preheat the oven to 240°C (465°F). Brush each portion with beaten egg or warm milk.

Sprinkle with a little sesame seed if desired; it is not essential. Bake for 10-15 minutes, until they look golden brown.

Enjoy them with the filling you like best, for example millet and zucchini burgers, salad, tomato, vegan mayonnaise, or whatever you prefer. They are also spectacular with caramelized onions.
